Zucchini ricotta muffins

Ingredients: 6 muffins

  • 125 g flour
  • 2 eggs
  • Baking powder
  • 75 g parmesan cheese
  • 75 g ricotta
  • 1 tablespoon olive oil
  • 2 small zucchini
  • fresh thyme
  • Salt & pepper

Instructions:

  1. Preheat the oven to 180 ° C.
  2. Place the flour and baking powder in a bowl.
  3. Add the eggs, the grated parmesan, the olive oil and the ricotta. Mix.
  4. Wash and cut the zucchini in really small dices.
  5. Add them to the batter, salt and pepper, add the thyme leaves. Mix again.
  6. Pour into muffin tins, fill them in two thirds only as it will rise.
  7. Bake for 25min.
  8. Enjoy with a salad!
