Ingredients: 6 muffins
- 125 g flour
- 2 eggs
- Baking powder
- 75 g parmesan cheese
- 75 g ricotta
- 1 tablespoon olive oil
- 2 small zucchini
- fresh thyme
- Salt & pepper
Instructions:
- Preheat the oven to 180 ° C.
- Place the flour and baking powder in a bowl.
- Add the eggs, the grated parmesan, the olive oil and the ricotta. Mix.
- Wash and cut the zucchini in really small dices.
- Add them to the batter, salt and pepper, add the thyme leaves. Mix again.
- Pour into muffin tins, fill them in two thirds only as it will rise.
- Bake for 25min.
- Enjoy with a salad!
