Red peppers and ricotta pie



  • 2 big red bell peppers
  • 6 sheets of filo pastry or puff pastry (you can also make your own 😉 )
  • 250 g ricotta
  • Salt & pepper
  • 2 tbsp olive oil
  • Fresh thyme


  1. Wash and cut the bell peppers in really thin and long strips.
  2. Cook them in a frying pan over medium heat with the olive oil. Add some salt and pepper. They should become soft and golden. Around 35 min.
  3. Cover a quiche tin with baking paper and 6 sheets of filo pastry.
  4. Spread generously the ricotta on the bottom of the pie with a spoon or spatula.
  5. Arrange the peppers slices in a nice circle on top of the ricotta.
  6. Sprinkle some fresh thyme leaves.
  7. Cook at 180 ° C for 20 min.
  8. Enjoy with a salad!
