Swedish cinnamon rolls

Ingredients:

  • Dough:
    • 350 g flour
    • 60 g butter, softened not melted
    • 50 g sugar
    • 15 g fresh yeast
    • 12 cl milk
    • 1 egg
    • a pinch of salt
  • Filling:
    • 50 g melted butter
    • 50 g sugar
    • 4 tbsp cinnamon

Instructions:

  1. Prepare the fresh yeast:
  2. Warm the milk in a bowl in the microwave very shortly. It should be warm but not too warm or your yeast will die. Warm as a bath, test with your finger.
  3. Sprinkle the yeast on top.
  4. Wait 2 min and sprinkle just a bit of sugar, less than one teaspoon (it will help the yeast to develop).
  5. Wait 10 min for the yeast to develop, it should start to form some foam on the surface
  1. Prepare the dough:
  2. Put the flour in a bowl. Make a well, add the yeast that you previously mixed with the milk.
  3. Add sugar, salt, egg and softened butter. Mix everything with your hand.
  4. Put the dough on a work surface and start kneading until the dough is firm and not at all sticky, around 10 mins without stopping. You can also put all the ingredients in a kitchen robot/processor or in a bread machine and let the device do it, the result will be even better.
  5. Form a ball and put back in the bowl. Cover it with a tea towel and let it rise for 2 hours in a close oven where you placed a bowl full of hot water at the bottom (it will help the dough to rise).

  2. In a bowl, mix the melted butter, sugar and cinnamon.

  2. Roll out the dough on a floured surface to form a rectangle. It should be about 3 mm thick and 30 cm wide.
  3. Spread the filling on the dough with a spatula.
  4. Roll the dough lengthwise.
  5. Cut the roll carefully into even slices. About 2 cm wide.
  6. Place them on a baking tray covered with baking paper.
  7. Let rise another hour or until the rolls have doubled in size. You can do once again the oven with a bowl of hot water if you want.
  8. Preheat the oven to 180 ° C.
  9. Whisk an egg in a bowl with a fork. Using a brush, lightly brown the top of the rolls.
  10. Bake for 15 minutes, monitoring the cooking.
  11. Let cool on rack.
