Super soft pumpkin pancakes



  • 250 g of cooked pumpkin (I steamed mine)
  • 75 g flour
  • 2 eggs
  • 125 g natural yogurt
  • 1 tablespoon baking powder


  1. Smash the pumpkin in a large bowl.
  2. Add the eggs, mix well.
  3. Add all the other ingredients and mix again.
  4. Pour a ladle of dough over a hot pan. Heat over medium heat until you see small bubbles on the surface. It’s a sign that it must be turned over. Allow about 2 to 3 minutes. Once the pancake is turned over, cook for about 1 minute more.
  5. Enjoy the pancakes with sweet or savoury ingredients: some cheese, vo or maple syrup
