Ingredients:
- 250 g of cooked pumpkin (I steamed mine)
- 75 g flour
- 2 eggs
- 125 g natural yogurt
- 1 tablespoon baking powder
Instructions:
- Smash the pumpkin in a large bowl.
- Add the eggs, mix well.
- Add all the other ingredients and mix again.
- Pour a ladle of dough over a hot pan. Heat over medium heat until you see small bubbles on the surface. It’s a sign that it must be turned over. Allow about 2 to 3 minutes. Once the pancake is turned over, cook for about 1 minute more.
- Enjoy the pancakes with sweet or savoury ingredients: some cheese, vo or maple syrup
