“Petits sablés” – butter biscuits 🍪

This is the traditional recipe of my grandmother (the best cook I have ever known) and everyone in my family is crazy about them. They particularly love them with coffee. ☕ They are super basic and simple but the butter flavour is just perfect!

Ingredients:

  • 1 egg
  • 250g plain white flour
  • 80g butter
  • 80g sugar
  • 1 tsp vanilla aroma
  • 1 tsp baking powder

Instructions:

  1. Preheat the oven to 200 ° C.
  2. Mix the sugar with the egg for at least 10 min, it should rise and double in proportion.
  3. Add the softened butter (not totally melted but creamy) and the vanilla aroma.
  4. Then add the flour and the baking powder.
  5. Knead the dough until you can shape it into a ball. Don’t knead too much, just what is necessary.
  6. Roll the dough on your floured kitchen worktop. Around 5mm thick.
  7. Cut out the dough with cookie cutters or if you don’t have any just use a glass.
  8. Place the biscuits on an oven tray covered with baking paper.
  9. Optional: brush the biscuits with egg yolk, it will make them golden and shiny. I personally prefer the matt result. 😉
  10. Bake them in the oven for 10min. Get them out as soon as it becomes a bit golden, don’t wait more or they won’t be as good!
  11. Let them cool down for 5 min.
