Kale and feta fritters


Ingredients: 10 medium fritters / 2 people

  • 64g flour – I used buckwheat
  • 120g kale
  • 3 eggs
  • 120g yogurt
  • 30g parmesan
  • Salt & pepper
  • 80g feta
  • 3 cloves of garlic
  • Optional: sauce with lemon, dill and yogurt.


  1. Mix eggs, flour, crushed garlic, salt, pepper and parmesan together in a large bowl.
  2. Wash, cut and process the kale leaves in a food processor.
  3. Mix the kale to the batter.
  4. Cut and add the feta as small dices.
  5. Heat some olive oil in a pan over medium-heat. Pour a ladle of the batter to form fritters. Cook until golden, 4-5 minutes per side.
  6. Serve with a yogurt/lemon dressing or whatever sauce you fancy!
