Ingredients: 10 medium fritters / 2 people
- 64g flour – I used buckwheat
- 120g kale
- 3 eggs
- 120g yogurt
- 30g parmesan
- Salt & pepper
- 80g feta
- 3 cloves of garlic
- Optional: sauce with lemon, dill and yogurt.
Instructions
- Mix eggs, flour, crushed garlic, salt, pepper and parmesan together in a large bowl.
- Wash, cut and process the kale leaves in a food processor.
- Mix the kale to the batter.
- Cut and add the feta as small dices.
- Heat some olive oil in a pan over medium-heat. Pour a ladle of the batter to form fritters. Cook until golden, 4-5 minutes per side.
- Serve with a yogurt/lemon dressing or whatever sauce you fancy!
