It really is the most delicious banana bread I ever tried and it’s healthy, life is beautiful. đ
Ingredients
- 2Â eggs
- 115Â g greek yogurt
- 2Â medium-size, ripe bananas, mashed (around 200 g)
- 75 g maple syrup
- 1 tsp vanilla extract
- 100Â g whole wheat flour
- 60Â g rolled oats
- 50 g oat bran (if you don’t have any you can use flour instead)
- 1 tsp baking soda
- 2 tsp ground cinnamon
- Optional: some crushed nuts (I used almonds and pecan)
Instructions:
- Preheat your oven to 180ÂșC.
- In a mixing bowl, mashed the banana with a fork, then beat the eggs in the mashed banana. Whisk in the yogurt, maple syrup and vanilla, mixing until smooth.
- Stir in the oats, oat bran, baking soda, flour and cinnamon.
- Optional: Add the crushed nuts or chocolate chips, whatever you like!
- Pour the batter into a loaf pan covered with a baking paper.
- Bake for 45 min, or until a knife inserted into the center comes out clean.
- Remove the bread from the oven and let it cool in the pan for about 10 minutes before unmolding it.
