Ingredients: 3 toasts
- 3 slices of bread
- 1 egg
- 100 ml almond milk
- 2 big apples
- 3 teaspoons of cinnamon
- 6 tablespoons of maple syrup
- 2 tablespoons of sugar
- 1 teaspoon vanilla extract
Instructions:
- Wash, peel and cut the apples in dices. Place in a pan with the sugar, cinnamon and some water.
- Cook until the apples become soft and golden (but not too much in order to keep them as pieces, you don’t want a compote). Add water every time it’s needed to avoid burning the apples. Mix every 2 min.
- Mix the egg and almond milk in a large bowl. Add the vanilla extract.
- Dip the slices of bread in this mix and take time to really press the bread to be sure it’s soaking up the milk egg liquid.
- Heat a frying pan with some butter and place the bread on it. Take time to cook them on both side until it becomes golden.
- Place the warm bread on plates.
- Top up with the caramelized apples.
- Pour the maple syrup on top (2 tablespoons for each toast).
- Sprinkle some crushed pecan.
- Optional: you can add a big spoon of sour cream/ whipped cream/ greek yogurt on top.
- Enjoy!
