I’m a HUGE fan of scones and I tried many recipes these last years. This one is the BEST ever and it’s also the easiest. Apparently it’s the Aussie version. 🙌 🇦🇺
Ingredients: 10 big scones or 15 smaller ones
- 260 g self raising flour
- 125 ml thickened / heavy cream
- 125 ml lemonade
Instructions:
- Preheat oven to 180 ° C.
- Line tray with baking paper.
- Combine the flour, cream and lemonade in a bowl and mix until flour is mostly combined. Do not over mix, it will make the scones dense!
- Turn out onto a floured surface, pat into a 2.5cm thick dough.
- Use a big round glass to cut rounds – press straight up and down (don’t twist), flour cutter in between.
- Place on tray, slightly touching each other (it will help them rise).
- Optional: brush the tops with milk. It will help them become golden.
- Bake for 15 minutes until golden on top.
