Ingredients:
- Dough:
- 350 g flour
- 60 g butter, softened not melted
- 50 g sugar
- 15 g fresh yeast
- 12 cl milk
- 1 egg
- a pinch of salt
- Filling:
- 50 g melted butter
- 50 g sugar
- 4 tbsp cinnamon
Instructions:
- Prepare the fresh yeast:
- Warm the milk in a bowl in the microwave very shortly. It should be warm but not too warm or your yeast will die. Warm as a bath, test with your finger.
- Sprinkle the yeast on top.
- Wait 2 min and sprinkle just a bit of sugar, less than one teaspoon (it will help the yeast to develop).
- Wait 10 min for the yeast to develop, it should start to form some foam on the surface
- Prepare the dough:
- Put the flour in a bowl. Make a well, add the yeast that you previously mixed with the milk.
- Add sugar, salt, egg and softened butter. Mix everything with your hand.
- Put the dough on a work surface and start kneading until the dough is firm and not at all sticky, around 10 mins without stopping. You can also put all the ingredients in a kitchen robot/processor or in a bread machine and let the device do it, the result will be even better.
- Form a ball and put back in the bowl. Cover it with a tea towel and let it rise for 2 hours in a close oven where you placed a bowl full of hot water at the bottom (it will help the dough to rise).
- Prepare the filling:
- In a bowl, mix the melted butter, sugar and cinnamon.
- Prepare the rolls:
- Roll out the dough on a floured surface to form a rectangle. It should be about 3 mm thick and 30 cm wide.
- Spread the filling on the dough with a spatula.
- Roll the dough lengthwise.
- Cut the roll carefully into even slices. About 2 cm wide.
- Place them on a baking tray covered with baking paper.
- Let rise another hour or until the rolls have doubled in size. You can do once again the oven with a bowl of hot water if you want.
- Preheat the oven to 180 ° C.
- Whisk an egg in a bowl with a fork. Using a brush, lightly brown the top of the rolls.
- Bake for 15 minutes, monitoring the cooking.
- Let cool on rack.
