Zucchini, gorgonzola and walnuts pasta 👌


One of my favourite pasta recipes, probably even my favourite. I just love blue cheese.

Ingredients: 2 people

  • 200g pasta of your choice (I like it with Linguine as the zucchini stripes get lost into them)
  • 90g gorgonzola
  • 2 small zucchinis
  • 1 brown onion
  • Salt & pepper
  • 1 handful of walnuts


  1. Peel and dice the onion.
  2. Cook it few minutes (until golden) in a frying pan with a bit of olive oil.
  3. Wash the zucchinis and make some super thin slices with a vegetable peeler or a chopper/mandoline – I use an electric one.
  4. Add them to the onions in the pan, cook for about 10 min, it should be soft but not too soft.
  5. Cook pasta according to instructions and strain them.
  6. Cut gorgonzola in small pieces (1cm by 1cm).
  7. Place pasta, zucchinis and small pieces of gorgonzola in the pan (outside of the fire but the pan is still warm, the one you used to cook the pasta). Mix delicately and just enough for the gorgonzola to melt.
  8. Serve warm with some crushed walnuts on top.
