Roasted turmeric cauliflower with yogurt and pomegranate.


Ingredients: 1 tray/3 persons

  • 1 cauliflower
  • 1 teaspoon turmeric
  • Salt & pepper
  • 1 clove of garlic
  • Juice of half a lemon
  • Olive oil
  • 100 g greek yogurt
  • Half a pomegranate
  • Fresh chive


  1. Preheat the oven to 200 ° C.
  2. Wash and cut the cauliflower in thick slices, around 2 cm.
  3. Place in a large baking dish.
  4. Peel and chop finely a clove of garlic.
  5. Pour the juice of half a lemon on top of the cauliflower slices.
  6. Pour also some olive oil (I use a spray to use minimum oil but have it everywhere 😉 ).
  7. Sprinkle some turmeric on top of the cauliflower, salt and pepper. Finally the garlic.
  8. Roast for 30 minutes, the edges of the cauliflower should start to be a bit golden.
  9. During the meantime prepare the pomegranate seeds in a bowl.
  10. Remove from the oven, let it cool just a bit and pour the greek yogurt on top of the slices.
  11. Sprinkle pomegranate seeds and fresh chopped chive.
  12. Enjoy when it’s still warm with some couscous or quinoa.
