Ingredients:
- 2 big red bell peppers
- 6 sheets of filo pastry or puff pastry (you can also make your own 😉 )
- 250 g ricotta
- Salt & pepper
- 2 tbsp olive oil
- Fresh thyme
Instructions:
- Wash and cut the bell peppers in really thin and long strips.
- Cook them in a frying pan over medium heat with the olive oil. Add some salt and pepper. They should become soft and golden. Around 35 min.
- Cover a quiche tin with baking paper and 6 sheets of filo pastry.
- Spread generously the ricotta on the bottom of the pie with a spoon or spatula.
- Arrange the peppers slices in a nice circle on top of the ricotta.
- Sprinkle some fresh thyme leaves.
- Cook at 180 ° C for 20 min.
- Enjoy with a salad!
