All my favourite Italian flavours mixed in one cake 🇮🇹
Ingredients:
- 170 g wholemeal flour – or normal plain flour if you prefer
- 2 tbsp baking powder
- 3 eggs
- 100 g yogurt
- 100 g basil pesto
- 115 g black olives sliced
- 60 g sun-dried tomatoes strips
- 100 g mozzarella – not grated
Instructions:
- Mix the eggs with the yogurt in a big bowl. Add the flour and the baking powder.
- Add the pesto and mix again.
- Cut the mozzarella in small pieces, around 1 cm.
- Add the olives, sun-dried tomatoes and mozzarella.
- Pour into a loaf pan covered with baking paper.
- Bake in the oven at 180 ° C for 45 min or until set.
- Enjoy with a salad.
