Pesto, mozzarella, black olives and sun-dried tomatoes cake

All my favourite Italian flavours mixed in one cake 🇮🇹

Ingredients:

  • 170 g wholemeal flour – or normal plain flour if you prefer
  • 2 tbsp baking powder
  • 3 eggs
  • 100 g yogurt
  • 100 g basil pesto
  • 115 g black olives sliced
  • 60 g sun-dried tomatoes strips
  • 100 g mozzarella – not grated

Instructions:

  1. Mix the eggs with the yogurt in a big bowl. Add the flour and the baking powder.
  2. Add the pesto and mix again.
  3. Cut the mozzarella in small pieces, around 1 cm.
  4. Add the olives, sun-dried tomatoes and mozzarella.
  5. Pour into a loaf pan covered with baking paper.
  6. Bake in the oven at 180 ° C for 45 min or until set.
  7. Enjoy with a salad.
