Healthy and delicious cookies 🍪

Ingredients: 8 cookies

  • Wet ingredients:
    • 100 g pitted dates 
    • 85 ml boiling water
    • 1 egg
    • 3 tbsp maple syrup or honey 
    • 3 tbsp coconut oil , melted, or butter
    • 1 tsp vanilla essence
  • Dry ingredients:
    • 100g rolled oats
    • 45g cup flaked almonds
    • 25g desiccated coconut
    • 40g raisins or sultanas 
    • 75g cup almond meal
    • 1/2 tsp baking powder
    • 1/2 tsp cinnamon

Instructions:

  1. Preheat oven to 180 ° C.
  2. Line a tray with baking paper.
  3. Roughly chop dates. Place in bowl, pour over boiling water. Cover and leave to soak for 10 min.
  4. Mash with potato masher or fork until it becomes a paste.
  5. Add remaining wet ingredients. Mix well.
  6. Add all dry ingredients. Mix again, it should form a thick batter.
  7. Form some small cookies (around 2cm thick and 6cm wide)
  8. Bake 20 minutes until golden. Not more or it won’t be soft in the middle!
  9. Remove from oven, leave to cool on the tray.
