Goat cheese, sundried tomatoes, pine nuts and pesto samosas 🍃


Ingredients: 6 samosas

According to me 6 samosas are perfect for 2 people as a light dinner with a salad. You can also make smaller ones for appetizers!

  • 12 sheets of filo pastry
  • 200g fresh goat cheese – you can also use cream cheese or cottage cheese
  • 125 g sun-dried tomatoes
  • 4 tbsp pine nuts
  • 2 tbsp pesto


  1. Preheat the oven to 200 ° C.
  2. Combine the cheese, pesto, pine nuts and sun-dried tomatoes (cut in small strips) in a bowl.
  3. Line an oven tray with baking paper.
  4. Unroll your filo pastry on a sheet of baking paper on top of your kitchen tabletop.
  5. Place 2 big tbsp of the cheese mix in a corner, then fold several times in order to shape triangles/ rectangles / the shapes of your choice!
  6. Place on the baking tray.
  7. Optional: brush them with some milk or egg (it will make them shiny)
  8. Cook in the oven for 20min or a bit less. As soon as it’s golden it’s ready!
  9. Serve with a salad for a light dinner or as appetizers!
