Cauliflower pancakes πŸ₯ž

These pancakes are so so fluffy!

Ingredients:

  • Half a cauliflower
  • 50 g flour
  • 2 tbsp baking powder
  • 2 eggs
  • 125 g yogurt
  • Salt & pepper
  • Herbs & spices of your choice – I love it with a bit of Za’atar

Instructions:

  1. Peel, wash and cut your cauliflower in small florets.
  2. Place in an electric food processor and process few minutes, you should obtain cauliflower “powder”.
  3. Place in a soup plate and heat 2 minutes in microwaves – it will make it softer.
  4. In a large mixing bowl, mix the cauliflower with the eggs and yogurt.
  5. Then add the flour, baking powder, pepper, salt, herbs, spices. Mix again.
  6. You should obtain a smooth batter.
  7. Heat a frying pan and pour a ladle of batter. Heat over medium heat until you see small bubbles on the surface. It’s a sign that it must be turned over. Allow about 2 to 3 minutes. Once the pancake is turned over, cook for about 1 minute more.
  8. Serve with hummus, cheese, sauces… Or top with some poached eggs, smoked salmon…
