These pancakes are so so fluffy!
Ingredients:
- Half a cauliflower
- 50 g flour
- 2 tbsp baking powder
- 2 eggs
- 125 g yogurt
- Salt & pepper
- Herbs & spices of your choice – I love it with a bit of Za’atar
Instructions:
- Peel, wash and cut your cauliflower in small florets.
- Place in an electric food processor and process few minutes, you should obtain cauliflower “powder”.
- Place in a soup plate and heat 2 minutes in microwaves – it will make it softer.
- In a large mixing bowl, mix the cauliflower with the eggs and yogurt.
- Then add the flour, baking powder, pepper, salt, herbs, spices. Mix again.
- You should obtain a smooth batter.
- Heat a frying pan and pour a ladle of batter. Heat over medium heat until you see small bubbles on the surface. Itβs a sign that it must be turned over. Allow about 2 to 3 minutes. Once the pancake is turned over, cook for about 1 minute more.
- Serve with hummus, cheese, sauces… Or top with some poached eggs, smoked salmon…
