Beetroot, zucchini and feta muffins.

So fluffy, you will love them!

Ingredients: 6 muffins

  • 3 small raw beetroots
  • 1 small zucchini (it helps to make them fluffy)
  • 150 g buckwheat flour / wholemeal flour
  • 8 cl milk
  • 2 eggs
  • 100 g feta
  • 1 handful of grated cheese (optional, I used mozzarella)
  • 2 tbsp baking powder
  • Salt & pepper

Instructions:

  1. Preheat oven to 180 ° C.
  2. Wash, peel and grate the beetroots and the zucchini with an electric food processor.
  3. Combine eggs, milk, flour, baking powder, salt and pepper in a large mixing bowl.
  4. Add grated beetroots and zucchini.
  5. Add grated cheese and diced feta.
  6. Fill in the muffins tins.
  7. Bake in oven for 25 min.
  8. Serve warm with a salad.
