Ingredients: 6 muffins
- 3 small raw beetroots
- 1 small zucchini (it helps to make them fluffy)
- 150 g buckwheat flour / wholemeal flour
- 8 cl milk
- 2 eggs
- 100 g feta
- 1 handful of grated cheese (optional, I used mozzarella)
- 2 tbsp baking powder
- Salt & pepper
Instructions:
- Preheat oven to 180 ° C.
- Wash, peel and grate the beetroots and the zucchini with an electric food processor.
- Combine eggs, milk, flour, baking powder, salt and pepper in a large mixing bowl.
- Add grated beetroots and zucchini.
- Add grated cheese and diced feta.
- Fill in the muffins tins.
- Bake in oven for 25 min.
- Serve warm with a salad.
