If you were like me, wondering what to do with the beetroot greens. You also think nothing should be wasted in the kitchen, this is a good easy recipe to start with 🙂
Ingredients:
- 1 onion, minced
- Large handful of fresh beet greens, roughly chopped (the more the better according to me)
- 4 eggs
- 100 g natural yogurt
- Salt & pepper
- 60 g goat cheese
- Chopped pecans
- Olive oil or coconut oil
Instructions:
- Heat a frying pan over medium heat with a bit of oil. Add the sliced onion. Cook for a few minutes, until softened.
- Add the beet greens and continue cooking until the greens are wilted.
- Whisk together the eggs and yogurt, and season with salt and pepper. Arrange the onion and beet greens in an oven-safe dish.
- Pour the eggs over the vegetables.
- Crumble the goat cheese over the frittata.
- Cook in the oven at 180 ° C, and bake for about 15 minutes or until set.
- Sprinkle with the pecans, serve with a salad.
