Beet greens Frittata

If you were like me, wondering what to do with the beetroot greens. You also think nothing should be wasted in the kitchen, this is a good easy recipe to start with 🙂

Ingredients:

  • 1 onion, minced
  • Large handful of fresh beet greens, roughly chopped (the more the better according to me)
  • 4 eggs
  • 100 g natural yogurt
  • Salt & pepper
  • 60 g goat cheese
  • Chopped pecans
  • Olive oil or coconut oil

Instructions:

  1. Heat a frying pan over medium heat with a bit of oil. Add the sliced onion. Cook for a few minutes, until softened.
  2. Add the beet greens and continue cooking until the greens are wilted.
  3. Whisk together the eggs and yogurt, and season with salt and pepper. Arrange the onion and beet greens in an oven-safe dish.
  4. Pour the eggs over the vegetables.
  5. Crumble the goat cheese over the frittata.
  6. Cook in the oven at 180 ° C, and bake for about 15 minutes or until set.
  7. Sprinkle with the pecans, serve with a salad.
