Ingredients: 1 tray/3 persons
- 1 cauliflower
- 1 teaspoon turmeric
- Salt & pepper
- 1 clove of garlic
- Juice of half a lemon
- Olive oil
- 100 g greek yogurt
- Half a pomegranate
- Fresh chive
Instructions:
- Preheat the oven to 200 ° C.
- Wash and cut the cauliflower in thick slices, around 2 cm.
- Place in a large baking dish.
- Peel and chop finely a clove of garlic.
- Pour the juice of half a lemon on top of the cauliflower slices.
- Pour also some olive oil (I use a spray to use minimum oil but have it everywhere 😉 ).
- Sprinkle some turmeric on top of the cauliflower, salt and pepper. Finally the garlic.
- Roast for 30 minutes, the edges of the cauliflower should start to be a bit golden.
- During the meantime prepare the pomegranate seeds in a bowl.
- Remove from the oven, let it cool just a bit and pour the greek yogurt on top of the slices.
- Sprinkle pomegranate seeds and fresh chopped chive.
- Enjoy when it’s still warm with some couscous or quinoa.
