Maple-roasted sweet potatoes

Ingredients:

  • 1 big sweet potato cut into small pieces (not too small)
  • 1 onion
  • 4 carrots (optional)
  • 3 spoons maple syrup
  • 1 teaspoon of cinnamon
  • 3 spoons olive oil
  • salt and pepper
  • Pecan nuts
  • Goat cheese

Preparations:

  1. Peel, cut and arrange sweet potatoes, carrots and onion in a baking dish.
  2. Combine maple syrup, olive oil, cinnamon, salt and pepper in small bowl. Pour the mixture over the sweet potatoes; toss to coat.
  3. Bake the sweet potatoes for 35 minutes at 180 ° C. Stirring after 15 minutes.
  4. Serve with crushed pecan nuts and sprinkle some goat cheese on top.
