Ingredients:
- 1 big sweet potato cut into small pieces (not too small)
- 1 onion
- 4 carrots (optional)
- 3 spoons maple syrup
- 1 teaspoon of cinnamon
- 3 spoons olive oil
- salt and pepper
- Pecan nuts
- Goat cheese
Preparations:
- Peel, cut and arrange sweet potatoes, carrots and onion in a baking dish.
- Combine maple syrup, olive oil, cinnamon, salt and pepper in small bowl. Pour the mixture over the sweet potatoes; toss to coat.
