Super easy pasta all’arrabbiata

Not sure it’s the exact traditional recipe, so to my Italian friends, forgive me, I just like it this way! 🇮🇹 🍝

Ingredients: 2 people

  • 180 g pasta (I used fresh pasta)
  • 2 big tomatoes
  • 4 garlic cloves
  • 4 tablespoons olive oil
  • Salt & pepper
  • Mixed italian herbs
  •  Freshly grated Parmigiano-Reggiano or Pecorino for serving

Instructions:

  1. Chop very finely the tomatoes.
  2. Peel and chop very finely the garlic cloves.
  3. Pour the olive oil in a frying pan, add the tomatoes and the garlic and reduce the heat to low. Stir just until fragrant, about 5 minutes. Season with salt and pepper, italian herbs.
  4. Cook the pasta according to the instructions in boiling water.
  5. Drain the pasta and add them to the frying pan in the tomatoes over medium heat, stir and toss until the pasta is well coated.
  6. Serve immediately, with grated Parmigiano-Reggiano on the side.
