Speculoos and apple tiramisu

Ingredients: 4 people

  • 250 g mascarpone
  • 3 eggs
  • 50 g brown sugar
  • 16 small speculoos biscuits
  • 4 small apples or 2 big ones

Instructions:

  1. Start by separating the white from the egg yolks.
  2. In a bowl, beat the sugar vigorously with the egg yolks until the mixture turns white.
  3. Add the Mascarpone. Mix well until you get a smooth surface. Keep the mixture cool.
  4. Whisk the egg whites and fold them delicately with a spatula into the mascarpone and egg yolk batter.
  5. Take 4 glasses and crumble 3 speculoos at the bottom of each glass.
  6. Cover with a layer of mascarpone cream, spread between the 4 glasses.
  7. Place in the refrigerator for a minimum of 4 hours (ideally 24 hours).
  8. Before serving, cut the apples into very small pieces and sprinkle them on top. Add a cookie and serve!
