Ingredients: 6 muffins
- 250 g grated pumpkin
- 100 g flour of your choice (I used buckwheat)
- 50 g mozzarella – or cheese of your choice, I love it with blue cheese
- 2 eggs
- 100 g natural yogurt
- 1 tbsp olive oil
- 2 tbsp baking powder
- Salt & pepper
- Italian herbs mix
- 3 tbsp of pumpkin seeds – or other nuts
Instructions:
- Preheated your oven to 200 °C.
- Grate the pumpkin.
- Beat the eggs with the oil and the yogurt.
- Then add the flour and baking powder and mix until you get a very homogeneous dough.
- Add salt, pepper, herbs and the cheese cut in small pieces.
- Stir in the grated pumpkin flesh and mix well.
- Fill the muffins tins 3/4 full, sprinkle some pumpkin seeds on top and bake for 20 minutes. It’s ready when you can easily insert a knife and take it out dry.
- Enjoy with a salad!
