Pumpkin and mozzarella muffins

Ingredients: 6 muffins

  • 250 g grated pumpkin
  • 100 g flour of your choice (I used buckwheat)
  • 50 g mozzarella – or cheese of your choice, I love it with blue cheese
  • 2 eggs
  • 100 g natural yogurt
  • 1 tbsp olive oil
  • 2 tbsp baking powder
  • Salt & pepper
  • Italian herbs mix
  • 3 tbsp of pumpkin seeds – or other nuts

Instructions:

  1. Preheated your oven to 200 °C.
  2. Grate the pumpkin.
  3. Beat the eggs with the oil and the yogurt.
  4. Then add the flour and baking powder and mix until you get a very homogeneous dough.
  5. Add salt, pepper, herbs and the cheese cut in small pieces.
  6. Stir in the grated pumpkin flesh and mix well.
  7. Fill the muffins tins 3/4 full, sprinkle some pumpkin seeds on top and bake for 20 minutes. It’s ready when you can easily insert a knife and take it out dry.
  8. Enjoy with a salad!
