My favourite pasta salad 🇮🇹


Ingredients: 4 people

  • 400g farfalle pasta – or pasta of your choice
  • 220g pitted black olives
  • 125g sun-dried tomatoes strips
  • 100g parmesan cheese – I use pecorino, less creamy once you grate it 🧀
  • 1 small bunch of fresh basil 🍃
  • 350g cherry tomatoes 🍅
  • Salt and pepper
  • 4 tbsp olive oil and 2 tbsp balsamic vinegar


  1. Cook the pasta according to instructions and place into a big serving bowl.
  2. Cut the olives and tomatoes in small pieces, add to the pasta.
  3. Add the sun-dried tomatoes strips.
  4. Shave the parmesan and add to pasta.
  5. Add olive oil, balsamic vinegar, salt, pepper and fresh basil (washed and cut with a scissors). Mix delicately.
  6. Ready to serve! It’s perfect in summer for a picnic or to eat with a barbecue.
