Ingredients:
- 6 eggs
- 1 bunch of mint
- 1 bunch of coriander
- 1 bunch of chive
- 1 tablespoon of baking powder
- 1 teaspoon of cumin
- 1 handful of walnuts
- 1 handful of dried cranberries
- 4 tablespoons of greek yogurt
- Half a pomegranate
- Some feta
Instructions:
- Preheat the oven to 180 ° C.
- Wash, strip and cut all the herbs
- Mix the eggs with the greek yogurt in a big bowl.
- Add the baking powder, cumin, salt, pepper, cranberries, walnuts and herbs. Mix again.
- Pour in an oven-proof dish covered with baking paper.
- Cook 15min or a bit more if needed.
- Unmold the omelette and serve with crumbled feta and pomegranate on top.
- Enjoy with a salad.
