Kuku – Persian omelette with herbs

Ingredients:

  • 6 eggs
  • 1 bunch of mint
  • 1 bunch of coriander
  • 1 bunch of chive
  • 1 tablespoon of baking powder
  • 1 teaspoon of cumin
  • 1 handful of walnuts
  • 1 handful of dried cranberries
  • 4 tablespoons of greek yogurt
  • Half a pomegranate
  • Some feta

Instructions:

  1. Preheat the oven to 180 ° C.
  2. Wash, strip and cut all the herbs
  3. Mix the eggs with the greek yogurt in a big bowl.
  4. Add the baking powder, cumin, salt, pepper, cranberries, walnuts and herbs. Mix again.
  5. Pour in an oven-proof dish covered with baking paper.
  6. Cook 15min or a bit more if needed.
  7. Unmold the omelette and serve with crumbled feta and pomegranate on top.
  8. Enjoy with a salad.
