Ingredients: 4 people
- 200 g green or red lentils
- 8 carrots
- 2 tablespoons of olive oil or coconut oil
- 1 medium onion
- 140 g tomato paste
- 2 teaspoons turmeric
- Salt & pepper
- Mixed of dried herbs
- 4 tablespoons of greek yogurt
- Fresh coriander
- Dukkah – optional
Instructions:
- Soak the lentils in water the day before if needed. I personally used green lentils (it’s quicker to cook) but of course you can also use red lentils.
- Peel and slice the onion.
- Fry the onion in a large stew pan with a bit of oil for few minutes, until it becomes golden and soft.
- Wash, peel and cut the carrots in slices, add them to the pan for few minutes.
- Cover with water and let cook for 15 min. Not too much water just enough to almost cover them.
- Add the lentils, tomato paste, salt, pepper, turmeric, mixed herbs.
- Let cook 15 min. Or more according to the lentils you are using.
- Serve with a spoon of greek yogurt on top, sprinkle some Dukkah and some fresh coriander.
