Perfect as appetizers. You can also replace the mozzarella cheese by blue cheese or cheddar. 🧀 🥦
Ingredients: 12 croquettes
- 1 broccoli
 - 70 g flour – I used buckwheat
 - 1 egg
 - 70 g mozzarella – not grated
 - Half an onion
 - Salt & pepper
 - 2 tbsp olive oil
 - Fresh coriander – or parsley/mint
 
Instructions:
- Preheated your oven to 200 °C.
 - Wash and cut broccoli florets.
 - Process them in a food processor, place in a large mixing bowl.
 - Add the egg, salt, pepper, olive oil and fresh coriander. Mix all together.
 - Add the flour and mix again.
 - Cut the mozzarella in small pieces and add to the mixture.
 - Finely chop half of the onion and add to the mixture.
 - Form small balls with a spoon or your hands and place them on a baking tray covered with baking paper.
 - Bake in the oven for 20 min.
 - Enjoy warm with some sauce – yogurt/lemon, barbecue...
