Ingredients: 4 people
- 400g farfalle pasta – or pasta of your choice
- 220g pitted black olives
- 125g sun-dried tomatoes strips
- 100g parmesan cheese – I use pecorino, less creamy once you grate it 🧀
- 1 small bunch of fresh basil 🍃
- 350g cherry tomatoes 🍅
- Salt and pepper
- 4 tbsp olive oil and 2 tbsp balsamic vinegar
Instructions:
- Cook the pasta according to instructions and place into a big serving bowl.
- Cut the olives and tomatoes in small pieces, add to the pasta.
- Add the sun-dried tomatoes strips.
- Shave the parmesan and add to pasta.
- Add olive oil, balsamic vinegar, salt, pepper and fresh basil (washed and cut with a scissors). Mix delicately.
- Ready to serve! It’s perfect in summer for a picnic or to eat with a barbecue.
