Recipe from a very good friend of mine who is also an excellent cook, Floor Meijs.
Ingredients:
- 350 g dates without pits
- Mixed nuts you like, cut into medium pieces
- 8 digestives biscuits
- 150 g butter or coconut oil
- 4 tablespoons honey
- Coconut flakes (optional)
- Cinnamon (optional)
Instructions:
- Put the dates and the butter in a pan on low temperature, so they wont burn, but they will become soft. Occasionally stir.
- In the meantime, crush the cookies (not too small, you want pieces as big as your thumb approximately).
- Put the cookies and the nuts into the pan with the dates. Stir it all really good.
- Add the honey and the cinnamon. Keep on stirring, make sure everything mixes okay.
- Then put all of the date/nut/biscuit dough into a baking tin with baking paper on the inside. Spread the mixture evenly over the baking tin. Let it rest for a few minutes so the cake can lose heat.
- Then put some plastic foil over the baking tin and put it in the fridge.
- Keep it overnight or for a few hours.
- When its stiff and cold, get the cake out of the tin and cut it into pieces, as big as you like.
- Optional:cover them with the coconut flakes (almond powder is also good).
